Low Carb Cauliflower Lasagne

Begin by cooking up a batch of your favorite tomato sauce. If making a meat sauce try to use ground white meat chicken or turkey to save fat and calories. I make mine with sausage flavored veggie meat, sauteed bell pepper, onions, and mushrooms. Set aside.

Process about 1/2 of a large head of raw cauliflower in a food processor until it looks like large crumbles, then microwave it for 5 or 6 minutes so it's not totally raw but not cooked enough to release a lot of moisture either.

After microwaving, measure out 3 full cups, but not packed, and place in medium to large bowl
Add 3 cups of low fat mozarella cheese shreds (I use Trader Joes Lite Mozarella)
Add 3/4 cup of egg beaters and mix it all together.

Spread the mixture evenly onto 2 cookie sheets that have been sprayed well with oil. (the kind with a slight edge all around) The mixture should be spread pretty flat, and small holes here and there are OK. Bake in preheated oven at 450 degrees for about 10 minutes. A little burn around the edges is OK, the top should be dry to the touch.

While this is cooking, microwave a package of raw spinach for about a minute or two, squeeze out excess moisture. Mix together in a bowl the spinach, 1/4 cup eggbeaters, and about 8 oz. fat free ricotta cheese.

Let the sheets of cooked caulflower and cheese mixture cool slightly. Cut each sheet into three pieces.

Put a thin layer of sauce in the bottom of a 13 x 9 pan, add a full sheet of the cauliflower mix that you have cut into thirds for easier handling. It should fit perfectly. Spoon mounds of the ricotta mix on top evenly. Add more sauce. You do not need a layer of shredded cheese because there is enough in the caulflower cheese sheet. Add the other sheet, then more sauce to cover all. You can top this with a little more shredded cheese, but just enough to cover thinly. Cover with foil loosely, and bake at 350 degrees until hot and bubbly all around the edges. Remove the cover for a few minutes until the cheese on top is brown. Cool before cutting into servings. Serves 6 - 8 generously.
